Pad Thai: The Comfort Food I Never Expected (Ritu)

Today, I want to share something small but special. My Thai friend recently gave me a whole packet of Pad Thai sauce, and it honestly made my week. I’ve always loved Pad Thai; it’s wholesome, comforting, and somehow feels like a warm hug on a plate. 

Pad Thai is a classic Thai stir-fried noodle dish made with rice noodles, juicy shrimp, eggs, tofu or meat, crunchy peanuts, bean sprouts, and a tangy-sweet sauce that balances tamarind, fish sauce, and a hint of sweetness. 


I’m actually a very picky eater, so trying new dishes is always a bit of a challenge for me. But Pad Thai was different. From the very first bite, I fell in love with it. I still remember the moment clearly: my Thai labmate took me to a Thai restaurant in Shizuoka, where I tried Pad Thai for the first time. That one meal changed everything! Since then, I’ve been visiting that restaurant almost every month just to enjoy the same dish.

I love the mix of textures that Pad Thai offers—the soft noodles, crunchy peanuts, and fresh bean sprouts all come together beautifully. And when you squeeze a little lemon on top, it makes it even better. The bright citrus kick is my absolute favourite part.

Now, with the sauce my friend gifted me, I’m finally trying to make Pad Thai at home. It feels exciting—like bringing a little piece of Thailand into my kitchen. You can see in the picture the Pad Thai my friend made compared to mine. Hers is far better, but I’m really planning to become better at this!

I guess food truly has a beautiful way of connecting people.
