Recently, I went to eat Kei-chan yaki with my friends. It felt like a very traditional local dish that represents the food culture of the Gifu region. Kei-chan yaki is a well-known specialty from the Hida area of Gifu and is made by stir-frying marinated chicken with cabbage and other vegetables on an iron plate. The seasoning is usually based on miso or soy sauce, and each restaurant or household has its own recipe.
The flavor was rich and savory, and the combination of tender chicken, vegetables, and miso-based sauce was very satisfying. While eating it, I felt that this dish reflects the climate, lifestyle, and traditions of the region.
