I sometimes visit the Kyushu region for my job, especially Oita prefecture.
I frequently eat "toriten".
It looks similar to "karaage", but the texture and seasoning are different.
Toriten is made by coating chicken in tempura batter and frying it. So toriten has light and fluffy texture.
It is lightly seasoned, so it is eaten with soy sauce or ponzu.
There are many restaurants, and flavor is diffenrent each other.
I also visit to areas around Oita.
In Nagasaki, I often eat "champon", which is well known. But I recently tried "sara-udon" for the first time.
In Kumamoto, I like "Kumamoto ramen". I like the garlic flavor and not so heavy taste.
Toriten is not easy to find in Honshu, so if you visit Oita, please try it!
