While attending an academic conference in Hiroshima, I had the opportunity to try some of the local specialties, including Hiroshima-style okonomiyaki. After the last conference session, I went to an okonomiyaki restaurant that I had spotted the day before. The owner was very nice and, as I visitor, I appreciated that he explained the proper way to eat the okonomiyaki.
Hiroshima-style okonomiyaki differs from the more common styles (such as the one famous in Osaka) in that it includes noodles and a layer of egg. The owner recommended that I avoid adding too much sauce and instead sprinkle a bit of shichimi chili pepper. Following his advice, I found that the flavours were indeed excellent. This dish became one of the memorable highlights of my trip to Hiroshima.
