 Tortillas are, of course, the most classic corn-based food in Mexico, but they're not the only one. This time, I'll introduce tamales, a classic breakfast food.



Tamales are corn dough filled with ingredients like meat and sauce, then wrapped in corn husks and steamed. Tamales are sold on the streets, and you'll often see women with large baskets selling them on the bus.

Tamales are often eaten with atole, a drink also made from corn.

There are many different types, but my favorite is the one with chicken sandwiched between a green sauce called salsa verde. The green tomato-based sauce is very tasty.

In the south, tamales are steamed in banana peels. It's a fascinating food that shows regional differences.
