Thank you for your question, Moisture content determines starch hydration and dough cohesion, temperature promotes partial starch gelatinization, and kneading ensures uniform water distribution and elasticity. Together, they control the chewiness and firmness of boba. Also, cooking time affects starch gelatinization and structure. Optimal cooking improves elasticity and chewiness, while overcooking causes excessive softening and loss of viscoelastic strength.

Cassava is generally not grown commercially in Japan because it requires a tropical climate. Japan mainly imports cassava and tapioca starch from Southeast Asian countries, such as Thailand and Indonesia. So, most tapioca pearls used in Japan are made from imported cassava.

返信削除The part I enjoyed the most was the slides comparing different types of pearls. I found it particularly interesting that starch composition influences the texture of the pearls produced. I have two simple questions:
1. From a chemical perspective, what causes the color change in boba, from a white dough initially to a brown color after processing?
2. Based on the SEM results shown in slides 11 and 12, could you explain what kind of information we can obtain from these images?

削除From a chemical perspective, the color change of boba from white to brown mainly occurs due to Maillard reactions and caramelization during cooking and processing. When tapioca pearls are heated, reducing sugars react with amino compounds, and sugars can also caramelize at high temperatures, resulting in the characteristic brown color.
Based on the SEM images (slides 11 and 12), we can obtain information about the microstructure of the pearls, such as starch granule shape, size, packing, and the presence of pores or gelatinized regions. These structural features help explain differences in texture, chewiness, and water absorption behavior among the pearls.

削除High amylopectin content leads to better elasticity in boba because amylopectin has a highly branched molecular structure. During heating and gelatinization, these branched chains form a flexible and cohesive starch network that can stretch and recover, resulting in a chewy and elastic texture.
In contrast, amylose has a more linear structure that tends to form rigid gels and retrograde more easily, which can make the pearls firmer or brittle rather than elastic.

返信削除Yes, the term “boba” is commonly used as a general name for the chewy pearls added to bubble tea, but tapioca pearls are the most typical and popular type.
Sago pearls and sweet potato pearls are not traditionally called boba, but in practice, they are often grouped under the “boba” category in bubble tea shops because they serve a similar function as toppings.
These alternatives are also used in bubble tea, especially to provide different textures, flavors, or colors, and sometimes to offer more variety beyond standard tapioca pearls.
The SEM data explaining tapioca's chewy texture was very interesting. This was my first time learning that tapioca pearl tea originated in Taiwan. I wonder if people in Taiwan have been eating tapioca for a long time, even before they started adding it to drinks?

Yes, tapioca has actually been part of Taiwanese food culture for a long time—mainly in traditional desserts and snacks, long before it became popular in drinks. The addition of tapioca pearls to tea was a later innovation that helped turn a familiar ingredient into what we now know as bubble tea.
